Flourless Orange Cake with Orange
Syrup |

A simple to make Almond Flour Cake for allergy
suffers
Melted butter to grease pan
2 oranges
3 eggs
1/2 cup honey
200grams of almond flour
1 tsp baking soda (not baking powder)
Method:
Preheat oven to 140C. Butter a round 22cm (base
measurement) pan with melted butter and lightly
grease. Line base with baking paper.
Place the oranges in a saucepan and cover with
cold water. Bring to the boil over medium heat.
Cook for 15 minutes or until tender. Drain.
Return to the pan and cover with cold water.
Bring to the boil and cook for 15 minutes (this
will reduce the bitterness of the peel).
Refresh under cold water. Drain coarsely
chopped oranges. Remove and discard any
seeds.
Place the chopped orange in the bowl of a food
processor and process until smooth.
Use an electric beater to whisk the eggs and
honey in a separate bowl. Add the orange,
almond flour and baking soda and gently fold
until just combined. Pour into prepared
pan.
Bake for 1 hour or until a skewer inserted into
the centre comes out clean. Set aside for 15
minutes to cool.
Turn cake onto a serving plate and cut into
wedges to serve.
Syrup:
¾ cup of honey
1 cup of orange juice
You can cut slices of orange and immerse into
the syrup then place on the top of the cake
Heat in a pan gently until thickened and pour
over cake.
